Chicken Marsala, my way.

Chicken Marsala

Marsala Chicken


I had  Marsala (Italian wine) left over from my Tiramisu, so I thought I'd come up with something yummy! Started throwing a bunch of stuff in a pan and came out with this! 

Prep time: 15 minutes
Cook time: 40-45 minutes


Ingredients:
- 4 Chicken Breasts
- Extra Virgin Olive Oil (I eye-balled it)
- 1 1/2 cups Marsala
- 1 1/2 Teaspoon salt 
- 1 Teaspoon Black-Ground Pepper
-  1/2 Teaspoon Oregano
- 3/4 Teaspoon Fresh Garlic
- Canned Pineapple Tidbits
- Dried Tomatoes
- 4 oz Can of Mushrooms 
- Parmesan Cheese 

Preheat oven to 350 degrees (180 C).

Beat, make sure they are completely thawed, chicken with a fork on both sides until very tender (Don't be scared to get crazy with those breasts!!) 

In a 9x12 baking dish pour in  the Marsala, Olive oil (just so it covers the bottom of the pan), salt, pepper, oregano, and garlic. Dip the chicken in the mixture and flip it over so that it has soaked up all that goodness. 
Place pineapple (as many as desired), mushrooms (drain most of the liquid, but pour in what is left),and dried tomatoes (However many you want, this is your chicken!).

Place in oven and bake for 40-45 minutes. 

Sprinkle Parmesan  cheese over before serving and enjoy!
